Hello lovlies! I have a fun-loving recipe to share with you. And it’s just a heart beet away. Who doesn’t love a good salad and who doesn’t love a ridiculously beautiful salad filled with all of the joys of tasty heart healthy ingredients?
This salad is filled to the brim with the good stuff, the good for the heart stuff that is. Featuring Beets, Hemp seeds, Walnuts, Lemon, and Sunflower sprouts. This salad aims to please even the most unloved of salad bowls. Beets improve circulation, hemp and walnuts have heart healthy omega 3’s. Spinach, lemons, and sunflower sprouts help reduce blood pressure, increase the elasticity of arteries and prevent heart disease thanks to all of the available iron, vitamin c and vitamin e. Now that’s what I call bioavailable.
So what does the doctor say: a salad a day tricks the romance to stay. Isn’t that what the doctors say? Well regardless of what the doctors say, you can defeat the coldest of days with the warmest of intentions with this recipe. Now what is the secret ingredient to this romantic salad? Love dear lovlies, love. Otherwise…….
Ingredients For the Salad:
- 2 cups sunflower sprouts
- 3 cups baby spinach
- 1/4 onion sliced thinly
- 1 cup chopped walnuts toasted
- 1/2 lemon juiced
- 2 pre-cooked and peeled beets, sliced.
First things first:
After slicing the beets you can now get creative and cut them into little heart shapes. I used mini cookie cutters, however you can do it by hand with any knife and a tiny bit of patience.

Save some of the beet juice from the packet of beets to make the pink onions.
Now preheat the oven to 325 degrees celsius and toast the walnuts for about six minutes, flip them, and toast for about 4 minutes further. (Note: I added sriracha and coconut aminos before toasting so they would be salty and spicy, however if you don’t have those at home it’s okay to keep it simple). Do not burn those walnuts, they need special attention. Let the walnuts cool.

Ingredients for the dressing:
- 2/3 cups hemp seeds
- 1 tbsp tahini
- 1 tbsp maple syrup
- 4 tbsp olive oil
- 1/2 lemon juiced
- 1 small clove garlic
- 1/2 tsp salt
- 2 tbsp vinegar ( I used sherry vinegar)
- 1 tbs dijon mustard
In a high-speed blender add the hemp seeds, lemon juice, olive oil, tahini, salt, vinegar, garlic, mustard and maple syrup. Add some water so that it is to your desired consistency. I added about 3 tablespoons. Blend it up until it is thickish and there are still some whole hemp seeds. If you accidentally over-blend the dressing add another tablesppon of hemp seeds to give it some texture before serving.
It’s now time to build the salad.
Put out two bowls. Add to each bowl the spinach, then sunflower sprouts, onions, walnuts then beets. Top it off with that glorious dressing. Serve it to yourself and a loved one.
My loved one today is ‘Le Gat’ the cat who doesn’t eat salad so I was able to love myself and have leftovers for a nice valentines day lunch. Boy am I ever lucky.
